This recipe was given to me by Tara (@living_guilt_free) and it was so delicious it would be a shame if I didn't share it!
In the past I had a weird relationship with pork and never ate it due to hearing things about parasites. But since learning that parasites and humans have a symbiotic relationship and how nutritious pork is (selenium, B vitamins, potassium), I have learned to love it.
Ingredients:
- Pork belly 1kg
- 1/2 cup broth
- 1/4 cup soy sauce
- 1 tbsp balsamin vinegar
- 1/2 cup brown sugar
- 2cm knob grated ginger
- Grated veggies like carrot, cucumber and steamed veg like boy choy
- Vermicelli noodles
Method
- Mix broth, soy sauce, balsamic vinegar sugar and ginger in slow cooker
- Sprinkle pork belly skin in salt and place in slow cooker without letting the liquid cover it
- Cook on low for 7 hours
- Take out and pat dry. Sprinkle more salt on skin and place under grill until it crackles (this can take about 30 or more min)
- Pour the remaining sauce in saucepan and bring to boil for 10 minutes to cook down
- Cook the noodles and prepare the veggies
- Plate up and pour sauce over everything
